Jimi,
Tell us a little more about your project so the fabricators on here can comment about the place to put the seam.
To line up a seam that isn't level use a seam setter. We carry 2 of them, the Abaco Ratcheting seam setter and the Bessy seam setter. Here are a couple of links to look at:

Mark thank you for the reply well this kitchen has an island with an over hang on one long side that i would like to go 11" over the 2 stem walls off the back of the cabinets below 2' overhang in between stem walls. I dont know how much overhang is safe or the best way to brace if needed. It's 3cm santa cecillia yellow @ 51"x97". as for the seams one side i wanted to go from the finish 3sided end through sink and past dish washer @ 106" seam then an L shaped piece to get to the wall 53 1/4" turn & 90 1/2" from wall to stove then one piece between stove @ fridge 34" all the tops are 25 3/4" deep. to use up rest of material a 22" x 60" master vanity 17" x48" shower bench 6"x 48" curb & 6" x37" cap for other stem wall in kitchen. I picked up 2 slabs today santa cec. 117 x  75" & 73" x115".  to get the main pieces I need I think I need to cut that L shaped strait to get the island and that wall off one piece because the 106" piece is 31" wide at finished end. I got a seam setter today.  Thanks
