Need Brief Summary of Improper Sealing Techniques for Granite

Greetings,
First time posting.  My client installed a granite countertop for a low price (seemed like a deal at the time).  Now the granite leaves wet spots and one oil (olive) spot.  How can I briefly explain the different techniques fabricators and installers use to seal granite and why some techniques fail quickly and others not so quickly?  Any advise on the oil spot?

Apply the sealer and allow for half an hour to pass. Apply again and rub with a clean cloth. Apply again after 2 hours. Work on small areas. Read somewhere that if you apply acetone and keep it from drying for a day, the stain will be gone. You can take the help of professionals if you want to.
