I am doing work to my own home and will eventually do a couple of rent properties I have. My question is about handling materials. What are the best ways of moving granite from the rack to the fab table etc...

Full slabs? Use a forklift with a boom and a slab lifter.

Yeah if you are dealing with full slabs you are gonna need a forklift with a boom and a clamp which is going to be pretty expensive. If you don't have these you are better off bringing your measurements to a fabrication shop and paying them to buy the slabs and fabricate it for you. You will still save alot on the installation cost and you won't have to deal with the headaches of fabricating it yourself.(and you won't get hurt) Always carry stone vertically, handle it like it's soggy drywall and you should be alright.

I have pre-fabricated counter tops. All I need to do is cut the sink holes. I dug around on the net and found some granite carts for carrying granite in an upright position. From what I found, I was able to build my own and it works pretty good. My son and I are able to move pieces around fairly easily this way.
