I have been trying to locate a 1-1/2 undermount ss sink that will fit in a 33" cabinet. I've not found any I like. If I go with 2 seperate sinks, what space should allow between them that will allow for clamps but will not weaken the granite and leave me in danger of cracking the stone?

Anytime you cut a hole in granite you weaken the granite.
Are you rodding the material for strength?
You should use a support. We have these:
