What surface are we talking about? If it is the edge design the process is:
Rough in shape on edge of slab (with grinding cup)
use a router bit to give you the edge design
Use a series of diamond polish pads to achieve the gloss you want (either wet or dry pads)

If you are polishing the surface area of an entire slab you need a machine like the Park Wizard. It uses a series of 8" diameter heads that first hone the material so it is all  on one plane and then polish it while keeping it on one plane so you have a mirror like finish. If you try to do this by hand you can achieve the high gloss, but it will have a wavy effect as you cannot keep a hand polisher always on the same plane at the same angle. We see a lot of this with concrete countertops.

If you give me a little better description to go on I will be happy to make a recommendation for you.
