What can I use to polish/smooth the edges of uneven travertine floor tile?

Are you talking about lippage? That is when adjacent tiles are at different heights. If that is the case you have 3 options:
1) Live with it (I hate this one)
2) Replace the tile(s) that are set wrong (depends on the number of tiles and their locations in the floor)
3) Grind the floor to one plane and re-polish to desired finish (This is the best idea, but not something for a do-it-yourselfer. A professional will charge $2.50 - $5 per foot for this and the equipment to do this costs $6,000 and up.).

If it is only a spot or two rather than a whole floor you can use diamond sandpaper in 40, 60, 120, 220, 400, & 600 grits to remove the material and then bring back the finish.
