As far as the rate of absorption, only pumice will compare to a paper towel or a terry towel, granite will not.
You need to get a stone that you like and seal it with a mineral based sealer like Hydrex:

Take a rag, wet it with Hydrex, wipe the stone (if it gets wet you have coverage). Allow 5 minutes to dry and give it a second coat.
You can seal an entire kitchen in 10-20 minutes. Even if you did it once a year it is no big deal and it does protect your investment by impregnating the stone against acids as well as stain proofing it.
