I am trying to find a good fabricator for my side work, what is a fair price to pay someone per sq ft to fab my jobs by hand either with their own tool or mine.  Slabs would be precut runs.  2cm and 3cm

You are going to have to shop around and compare quality and price. There is no industry standard.
