Are there times when using clear polyester or epoxy would be preferable to coloring.  I have a couple of seams to do on venetian gold.  They are pretty tight but have a couple of tiny chips.  It looks to me like they will look near perfect if I just used clear material to join the seam rather than color it.

It can be done. Usually the glue is colored to match the base color of the stone, but if the seam is tight enough you would not need color. Are you using a Seam Phantom?

No Seam Phantom, I am just DIY with a couple of seams.  Used a straight edge, cut/fit, polished/fit until it got to perfect.  I almost don't want to use any filler b/c it looks like it is just going to sit on top of the seam and when i razor blade it is all going to come right back off and i risk messing up the top polish.

If you have a substrate use a liquid poly like Crystal which dries water clear. Put masking tape on both sides to create a dam, fill dam with poly and let it harden. Rip off the masking tape then scrape off the excess dried poly with a razor blade helv perpendicular to the surface. It will not affect the top of the granite.
This IS granite, right?

Using seam phantom is not going to work either you should try Used a straight edge, cut/fit, polished/fit until it got to perfect,that is the perfect solution.

It is not only where the seams meet, but also where the edge is created. Often fabricators are so good at creating the edges that people do not realize they are in fact attached to the slabs and that there is a seam.
