I picked up several new fabricated granite countertops left over from a hotel restoration. Two were previously installed but then removed (wrong size) and are shiny as expected. Three others were never installed but are a bit dull.  They are all the same color, so I am wondering if the dull pieces are simply not polished?  They are a little shiny, but not the nice gloss finished of the two removed pieces.  Maybe a final polish was to be done after the install???  If so, then is it safe to assume I can have a local granite finisher final polish these before I install them?

Slabs are polished at the manufacturer's level, not at the fabricators level. You can find someone with a radial arm polisher or if they are a little shiny you can buff them with a polishing compound like Diaglo to enrich the gloss.

usually it is polished before installation.
