We are working on a pricey set of slabs where the black areas are extremely soft with visual pores. Polishing it through the first 4 or 5 stages is resulting in it flaking or crumbling. The surrounding brown and copper colored areas are much harder and are holding up as you would expect. Any ideas?

You could mix some flowing poly and coat the edges and then work through them. This may deter some od the flaking of the material. If you cannot get the flowing thin enough to penetrate mix some acetone with it.

We worked on a granite (actually a shale) that would flake apart to the point where we couldn't polish it.  We ended up having to pour a clear penetrating epoxy on the edges multiple times and we also had a lot of holes and chips to fill.  By the time we were done filling the edges up, they were more plastic than granite, but it did hold everything together.  Good luck.
