1/2-inch? 5/8-inch? or 3/4-inch CDX plywood?

what type of screws should I use?

The deal I cut with my granite countertop mfg is that I install the plywood to save a few bucks...

are you using 2cm granite with a laminated edge or 3cm granite?

2 cm with an Ogee Bullnose (1 1/2 x 3/4)

If you have a laminated edge to make the front look twice as thick (normal with 2cm) then use 5/8" as it will not drop below the level of the lamination.
If you have question about this you really should ask the fabricator about it.
